La ricotta al forno dura è un latticino a pasta semidura, originariamente nata per conservarsi più a lungo della ricotta fresca. Storicamente si usava posizionarla in graticci metallici, in presenza di un focolare, dove il fumo della legna, che bruciava per riscaldare l’ambiente, essiccava lentamente il prodotto. Ideale per ricette tipiche locali, può anche essere impiegata in sostituzione di formaggi da grattugia.
The oven baked hard ricotta is semi-hard whey cheese conceived to extend the shel-life of the fresh ricotta. The consistence of this version is slightly harder. The traditional methods of baking ricotta consisted in positioning the fresh ricotta in metal grids which were subsequently moved close to wooden fire where the smoke and the heat dried the ricotta. This product is ideal for starters and appetisers.
